Sometimes it's hard to figure out what to cook. In this section we have some ideas you can use for making a main meal. Most of these recipes are very easy, and aren't based on any specific ingredients so much as basic principles.
At our house we have two big freezers. One is full of fruits and vegies we have harvested. The other is full of meat we've harvested. When we do buy food it tends to be the same kinds of things: bulk fruits, vegies, and meat. So making dinner is mainly a matter of picking some stuff out of the freezer and thawing it out.
Besides that, we have some other standard ingredients around:
| • | Dried starches: Rice and GF pasta. Either of these are quick to make on a short notice. |
| • | Dried beans: You can't make these quickly, they need to be soaked. So you have to plan in advance. |
| • | Sweet potatoes and white potatoes: We prefer sweet potatoes, which are higher in vitamins and, I think, yummier. I get the light colored ones, which stay firmer when sauteed or broiled. You can use sweet potatoes in most recipes that call for white potatoes. Sometimes though, a good baked potato is just yummy. |
| • | A really good selection of spices. I do love Penzy's! I buy spices in bulk and keep them in the freezer too. |
We don't usually serve bread or baked goods with dinner. If we have some fresh-baked bread, we might make sandwiches, but trying to get fresh bread done in time for dinner makes life more complicated. Sometimes though, making some bread sticks or corn bread to go with a good soup or chili is nice!
