Caramel Oatmeal Crisps

This tastes a lot like the iconic "oatmeal cookie", only a little flatter and crispier. If you add more flour, it will be thicker and fluffier ...  but ... well, we like them this way.

Now that GF oats are available, this is a great use for them!

1/2 cup un-butter
1 cup brown sugar
1 egg
1 tsp vanilla

Mix these together.

If you don't have Un-butter, you can use coconut oil or just plain butter if it gets along with you.

1 Tbls Corn Starch
1 Tbls Potato Starch
1 Tbls Rice flour
1 tsp. baking powder
1/2 tsp xanthan gum
1/4 tsp salt

Mix these together. Then add them to the mix above.

2 cups oats
1/2 cup raisins
1/2 cup nuts

Add these to the previous mix. Drop by the spoonful onto a baking sheet. They spread a lot, so leave room! Bake at 325 degrees for 10 minutes.
