Your next step is to either mash the vegies, or wait a bit until they wilt. The idea here is to get rid of air bubbles, and extract some water from the cell walls. Cut up vegies don't pack well, so there is lots of air space. Air invites mold. So you have to fill up this air space. You can do that in 3 ways:
