I adapted this from the good ol' Joy of Cooking, the older edition. Most of the recipes in that book are "off the grid" by default. Folks didn't rely so much on canned foods or name brands: just basic ingredients. Most of the non-baked-goods are GF by nature, except for flour used as thickening, which is easily replaced.
I like this recipe because there are so few ingredients in it. The eggs do most of the work, so it's not terribly critical what kind of flour you are using.
Wet ingredients |
2 egg yolks 1/3 cup water 1/3 cup milk (or more water, or milk substitute, or coconut milk) 1 T lemon juice, or brandy, wine, or rum |
Mix.

Dry ingredients |
1 cup rice flour (or any flour mix you like) 1/4 tsp. salt 2 TB sugar |
Mix. Then add to the wet ingredients above and mix. |
Leavening |
2 egg whites 1/8 tsp. salt |
Whip until peaks form. Then fold them carefully into the rest of the ingredients. At this point, you'll have a fluffy batter which holds together pretty well. |
Fruit |
Pitted, halved, plums Banana pieces Peach slices |
Now, you need some cut up fruit. I think anything will taste pretty good in these, so use whatever you have handy. You kind of immerse the fruit in the batter, and spoon it out so it's covered in batter. This is a bit of an art at first, it will tend to slip off the fruit. But even if it does, they still taste good. |
Fry up the fritters as per the previous recipe. When they are done, sprinkle with powdered sugar, or serve with some sweet syrup. |
