Chicken Rice

Chicken rice is an Asian comfort food, and it is amazingly yummy for such a simple dish. Actually, it can be quite complex and a true gourmet treat. But the way we make it, it is very simple.

Make your rice as you ordinarily would, but use chicken broth instead of water. Hopefully, you have some good broth handy. You can use leftover soup too.

Alternatively, you can put whole chicken pieces (or a whole chicken) in the pot with the rice. Just cook rice as you ordinarily would, and add a few chicken pieces and salt. Ideally, this is chicken with the skin, and bones. Adding giblets is even better.

Add a little more water than you ordinarily would. The rice will be mushy, almost like a porridge, and doesn't make a great pic. But it is truly delicious. Trust me!
